Simple Vegetable Biriyani

Ingredients:

*2 cups boiled Basmati rice (I choose Daawat Basmati Rice,its the best).

*2 Onions,sliced.

*10 Cashew nuts,broken into halves.

*Raisins (if using).

*1 large Carrot,chopped  into cubes.

*4-5 Beans,chopped.

*1 roll Pineapple,chopped thinly.

*2 tbps Ghee.

*A handful of Mint leaves or Coriander leaves(as per your taste),chopped.

Preparation:

*Heat the ghee and fry onions until brown and crisp.

*Remove the onions and in the same ghee add the cashew nuts and raisinsand fry for a few seconds.

*Remove and keep aside for garnishing.

*Boil the vegetables in a pressure cooker.

*Grease a casserole,spread some vegetables,fried onions,nuts,raisins,mint leaves/coriander leaves and pineapple on it.

*Then layer rice on it.Repeat with the reamaining ingredients.

*Sprinkle some ghee in between each layer.

*Serve hot with veg kurma or chicken curry and a healthy salad.
